  • 1 cup Corn Can use canned or frozen corn.
  • 2 cups Fresh veggies (bell peppers, onions, tomatoes) Chopped.
  • 1/2 cup Feta cheese Optional topping.

Method

Preparation
  1. Marinate the flank steak in olive oil, lime juice, salt, and pepper for at least 30 minutes.
  2. While the steak is marinating, chop the fresh veggies.
Cooking
  1. Grill the marinated flank steak to your desired doneness, about 5-7 minutes per side for medium.
  2. While the steak is grilling, cook the rice according to package instructions.
  3. Prepare the black beans and corn by heating them together in a small pot.
Assembly
  1. Once the flank steak is done, let it rest before slicing into thin strips.
  2. In bowls, layer the rice, black beans, corn, fresh veggies, and sliced flank steak.
  3. Top with crumbled feta cheese if desired.
  4. Serve and enjoy your delicious Flank Steak Bowl!

Notes

For added flavor, use a rub on the steak before marinating — think cumin or chili powder! If you want to mix it up, try vegetarian protein like grilled tofu or tempeh instead of steak. Don't skimp on the lime juice; it brings the whole bowl together.
