- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute.
- Toss in the sliced zucchini and bell pepper; cook until tender-crisp, about 3-5 minutes.
- Drizzle with soy sauce, sprinkle with salt and pepper to taste, and give it a good mix.
- Serve over cooked rice or noodles.
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the microwave for 2 minutes.
