Method
 

Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Toss in the sliced zucchini and bell pepper; cook until tender-crisp, about 3-5 minutes.
  5. Drizzle with soy sauce, sprinkle with salt and pepper to taste, and give it a good mix.
  6. Serve over cooked rice or noodles.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the microwave for 2 minutes.
