Ingredients
  

Vegetables
  • 2 cups bell peppers, chopped Any color
  • 1 medium zucchini, chopped
  • 1 medium red onion, chopped
  • 1 cup mushrooms, halved Use button mushrooms or any preferred type
Marinade
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 pieces skewers Wooden or metal skewers

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Chop the bell peppers, zucchini, red onion, and mushrooms into bite-sized pieces.
  3. In a bowl, combine the vegetables with olive oil, garlic powder, salt, and black pepper.
  4. Thread the marinated vegetables onto the skewers.
Cooking
  1. Grill the skewers for 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Feel free to mix in different vegetables based on the season. Add tofu or seitan for more protein.
