Ingredients
  

For the Quiches
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, etc.)
  • to taste salt
  • to taste pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup pre-made pie crust or phyllo dough (optional) Use if you prefer a crust.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs and milk.
  3. Stir in cheese, diced vegetables, salt, pepper, garlic powder, and onion powder.
  4. If using, lightly grease the mini muffin tins and press small rounds of pie crust or phyllo dough into each cup.
  5. Pour the egg mixture evenly into each prepared muffin cup until about 3/4 full.
Cooking
  1. Bake for 18-22 minutes or until the quiches are puffed and golden brown.
  2. Allow to cool slightly, then remove from the muffin tins and serve warm.

Notes

These quiches can be stored in the fridge for about 3-4 days in an airtight container. Freeze for up to 2 months. Reheat in the microwave for 30 seconds to a minute, or in the oven at 350°F for 10-15 minutes.
