Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, whisk together the eggs and milk.
- Stir in cheese, diced vegetables, salt, pepper, garlic powder, and onion powder.
- If using, lightly grease the mini muffin tins and press small rounds of pie crust or phyllo dough into each cup.
- Pour the egg mixture evenly into each prepared muffin cup until about 3/4 full.
Cooking
- Bake for 18-22 minutes or until the quiches are puffed and golden brown.
- Allow to cool slightly, then remove from the muffin tins and serve warm.
Notes
These quiches can be stored in the fridge for about 3-4 days in an airtight container. Freeze for up to 2 months. Reheat in the microwave for 30 seconds to a minute, or in the oven at 350°F for 10-15 minutes.
