Preparation
  1. Hard boil the eggs: Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let them sit for 12 minutes. Transfer the eggs to an ice bath to cool.
  2. Peel and slice: Peel and slice the eggs in half lengthwise.
  3. Mash the yolks: Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Fill the egg whites: Spoon or pipe the yolk mixture back into the egg whites.
  5. Garnish: Sprinkle with paprika and fresh herbs for garnish. Serve immediately or chill before serving.

Notes

These deviled eggs will keep in the fridge for up to three days in an airtight container. If making ahead, store without garnish until ready to serve.
