Ingredients

For the Chicken Marinade
  • 2 large chicken breasts (Boneless and skinless)
  • 1 cup buttermilk Can be substituted with milk
  • 1 teaspoon paprika Adds flavor and color
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Chicken Coating
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
For the French Toast
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 8 slices thick-cut bread (Challah or brioche recommended)
  • 2 tablespoons butter (For cooking the French toast)
For Serving
  • Maple syrup (For serving, to taste)
  • Powdered sugar (For garnish)
  • Fresh fruit (Such as strawberries or blueberries)
  • Whipped cream (For serving)

Method

Preparation
  1. Marinate the Chicken: Soak the chicken breasts in buttermilk, seasoned with paprika, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 30 minutes (or overnight if you can wait).
  2. Prepare the French Toast: In a bowl, whisk together eggs, milk, and vanilla extract. Dip each slice of bread into the mixture, letting it soak for a moment for that perfect custardy texture.
Cooking
  1. Prepare and Cook the Chicken: Dredge the marinated chicken in flour, then in the breadcrumbs. Fry in a skillet until golden brown and cooked through.
  2. In the same skillet, melt butter and cook the French toast slices until golden. Layer the crispy chicken between two slices and drizzle with maple syrup.
Serving
  1. Top with powdered sugar, fresh fruit, and a dollop of whipped cream for an Instagram-worthy creation!

Notes

For an extra rich flavor, double-dip the bread. You can also substitute panko breadcrumbs for extra crunch. Customize toppings and use flavored syrups if desired. Leftover sandwiches keep in the fridge for about 3 days.
