Preparation
  1. Cook the pasta according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, broccoli, cherry tomatoes, red onion, and shredded carrots.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Add crumbled feta cheese on top and gently mix.
  6. Serve chilled or at room temperature.

Notes

This salad is a great make-ahead option and keeps in the fridge for up to three days. Use leftover pasta and mix and match veggies to customize.
