  • 4 cups Fresh corn kernels Sweet corn is preferred.
  • 1 medium Ripe avocado Chopped.
  • 2 cups Cherry or diced tomatoes Chopped.
  • 1 small Red onion Diced.
  • 1 bunch Fresh cilantro Chopped.
Dressing
  • 1 lime Freshly squeezed lime juice Makes a difference in taste!
  • 2 tablespoons Olive oil For dressing.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.

Method
 

Preparation
  1. In a large bowl, combine fresh corn, diced avocado, chopped tomatoes, and diced red onion.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and add chopped cilantro.
  4. Toss gently to combine.
  5. Serve immediately or let chill in the fridge for 30 minutes to enhance the flavors.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days. For maximum freshness, prep all ingredients except avocado and dressing ahead of time, and combine just before serving.
