Ingredients
  

Main ingredients
  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter Preferably unsalted
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish Optional

Method
 

Preparation
  1. Pat the steak dry with paper towels.
  2. Season with salt and pepper.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the steak bites for 1-2 minutes per side until browned. Remove from the skillet.
  3. Add butter to the skillet, letting it melt. Then add the minced garlic and cook for 30 seconds until fragrant.
  4. Toss in the zucchini and cook for 3-5 minutes until tender-crisp.
  5. Return the steak bites to the skillet and mix with garlic butter and zucchini. Cook for another 1-2 minutes.
  6. Garnish with fresh parsley before serving.

Notes

Use a cast-iron skillet for an even better sear. For an extra kick, add a splash of soy sauce while cooking the zucchini. Can substitute zucchini with bell peppers or asparagus, and for vegan, use mushroom chunks and coconut oil. Don't forget to toast the garlic for better flavor.
