Ingredients

Pasta and Shrimp
  • 8 ounces linguine or spaghetti noodles
  • 1 pound large shrimp, peeled and deveined
Sauce
  • 2 tablespoons unsalted butter
  • 1 cup full-fat heavy cream
  • 1/2 cup finely grated Parmesan
  • 4 cloves garlic, finely minced
  • 1 teaspoon dried Italian herb blend
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup low-sodium chicken stock or reserved pasta cooking liquid
  • 1/4 teaspoon crushed red chili flakes (optional) for spice
  • Salt and ground black pepper to preference
  • 2 tablespoons chopped flat-leaf parsley for garnish

Method

Cooking the Pasta
  1. Fill a large saucepan with water, add a generous pinch of salt, and bring to a boil.
  2. Cook the pasta following the package guidelines until al dente. Drain well, reserving approximately half a cup of the starchy cooking water.
Sautéing the Shrimp
  1. In a wide skillet set over medium heat, combine the butter with the olive oil.
  2. Once melted and hot, arrange the shrimp in a single layer. Season lightly with salt and pepper.
  3. Sauté for 1 to 2 minutes on each side until the shrimp are opaque and just cooked through. Transfer to a separate plate.
Making the Sauce
  1. Using the same pan, add the minced garlic and sauté briefly for about 30 seconds, just until aromatic.
  2. Stir in the heavy cream and chicken broth (or reserved pasta water).
  3. Add the grated Parmesan, Italian seasoning, and red pepper flakes. Allow the mixture to gently simmer for 3 to 4 minutes, stirring occasionally, until the sauce begins to thicken.
Combining Everything
  1. Return the drained pasta and seared shrimp to the skillet.
  2. Gently toss everything together until coated evenly in the cream sauce. If the mixture appears too thick, stir in a splash of reserved pasta water to loosen it to your desired consistency.
  3. Finish by sprinkling over the chopped parsley and, if desired, a little more grated Parmesan.
  4. Serve the dish hot, directly from the pan or plated individually.

Notes

Serve in shallow bowls garnished with fresh parsley and grated Parmesan. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to a month. Reheat with a splash of broth or cream.
