  • 4 large potatoes Russets are recommended for fluffiness.
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan option.
  • 2 tablespoons chopped fresh parsley Optional, for garnish.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes, then cut them into wedges.
  3. In a large bowl, combine the potato wedges, olive oil, garlic powder, onion powder, salt, and pepper. Toss until the wedges are evenly coated.
  4. Spread the wedges in a single layer on a baking sheet.
Cooking
  1. Bake for 25-30 minutes, flipping halfway through until golden and crispy.
  2. Remove from the oven and sprinkle with Parmesan cheese and parsley before serving.

Notes

Keep an eye on the wedges in the last few minutes of baking; they can go from perfectly golden to overly crispy quickly. Store leftovers in the fridge for up to 3 days or freeze for a month. Reheat in the oven for best results.
