  • 1 can (13.5 oz) coconut milk
  • 4 cloves garlic, minced Toasting the garlic enhances the flavor.
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice Can be swapped for lemon juice for a different zest.

  • Fresh cilantro, for garnish
  • Cooked rice or crusty bread, for serving For soaking up the rich sauce.

Method

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add shrimp, lime juice, salt, and pepper.
  5. Cook until shrimp are pink and cooked through, about 5-7 minutes.

Notes

For an extra kick, throw in a pinch of red pepper flakes while cooking. Adjust the thickness of the sauce by simmering longer or adding a splash of chicken broth. Got leftovers? Refrigerate for up to 3 days or freeze for up to a month.
