  • 1 cup almond flour Can be replaced with oat flour for nut-free option.
  • 1/2 cup cocoa powder Add more for a richer chocolate taste.
  • 1 cup coconut sugar Adjust sweetness to taste.
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup almond milk Can substitute with any dairy-free milk.
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar Helps to react with baking soda for leavening.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cake pan with parchment paper.
  2. In a large mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, and salt.
  3. Add almond milk, melted coconut oil, vanilla extract, and apple cider vinegar to the dry ingredients. Mix until just combined.
  4. Pour the batter into the prepared cake pan, smoothing the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Serve as is or frost with your favorite vegan frosting.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days or freeze slices for up to 3 months. For best flavor, frost just before serving.
