Ingredients

For the Pork Chops
  • 2 pieces thin-cut bone-in pork chops (approx. 1.5 inches thick) Choose thin-cut chops for quick cooking.
  • 1 tsp kosher salt Rub on the pork chops for flavor.
  • 1/2 tsp coarse black pepper Add to the pork chops before grilling.
  • 1/4 cup dark brown sugar (packed) Used for the glaze.
  • 1 tsp apple cider vinegar Mix with brown sugar for glaze.
  • 1 cup fermented shredded sauerkraut (drained) Warm before serving.
  • 1 tbsp fresh parsley (finely chopped) Add to sauerkraut for freshness.
  • 1 tbsp avocado oil Use for grilling.

Method

Preparation
  1. Pat the pork chops dry. Rub them with kosher salt and let them sit while you prepare the glaze.
  2. In a bowl, mix the dark brown sugar and apple cider vinegar until it becomes a paste.
  3. Add black pepper to the pork chops and brush both sides with avocado oil.
Cooking
  1. Preheat the grill to medium-high.
  2. Grill the chops for about 6-7 minutes per side until cooked through, basting with the glaze in the last few minutes.
  3. Warm the drained sauerkraut in a pan for a minute or two and add fresh parsley before serving.

Notes

For best results, don’t rush the basting process; it's key for that luscious caramelized layer. Let the pork rest for a few minutes after grilling.
