Ingredients
  

Main Ingredients
  • 12 ounces Udon noodles
  • 2 cups Mixed vegetables (e.g., bell peppers, carrots, broccoli) Feel free to use your favorite vegetables.
  • 1 pound Protein (e.g., chicken, shrimp, tofu) Choose your preferred protein.
Sauce and Seasoning
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sesame oil For cooking.
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 tablespoons Green onions, chopped For garnish.
  • 1 tablespoon Sesame seeds For garnish.

Method
 

Preparation
  1. Cook the udon noodles according to package instructions. Drain and set aside.
Cooking
  1. In a large wok or skillet, heat sesame oil over medium-high heat.
  2. Add minced garlic and ginger, sauté until fragrant.
  3. Add your choice of protein and cook until no longer pink.
  4. Toss in your vegetables and stir-fry until tender.
  5. Add the cooked udon noodles to the skillet.
  6. Pour soy sauce over the noodles and toss everything together, cooking for an additional 2-3 minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

Leftovers can be stored in the fridge for up to three days. For freezing, keep for about two months. Reheat on the stovetop with a splash of water or soy sauce.
