  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 pieces corn or flour tortillas
  • Salt and pepper to taste
Optional Toppings
  • sour cream For serving
  • chopped cilantro For garnish
  • sliced olives For serving

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chopped onion and minced garlic over medium heat until softened.
  3. Add the ground beef to the skillet, cooking until browned. Season with salt and pepper.
  4. Stir in half of the enchilada sauce and allow to simmer for a few minutes.
Assembly and Baking
  1. In each tortilla, place a spoonful of the beef mixture and sprinkle some cheese. Roll the tortillas and place them seam side down in a baking dish.
  2. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
  3. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  4. Serve hot with optional toppings.

Notes

Leftovers can be stored in the fridge for about 3-4 days in an airtight container. They freeze well for approximately 3 months. You can also add black beans or corn to the beef mixture, use tortilla chips for a crunchy casserole, and experiment with different types of cheese.
