Preparation
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the oats, flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together the apples, applesauce, oil, eggs, vanilla, and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups.
Baking
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For variations, try adding nuts, dried fruits, or different spices. Muffins can be stored for 3-4 days in the fridge or frozen for up to three months.
