  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar or maple syrup Use maple syrup for a more natural sweetener.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup grated or diced apples Use your favorite variety.
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil or melted coconut oil
  • 2 pieces eggs Can substitute with flax eggs for vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 cup milk Can use dairy or non-dairy milk.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oats, flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the apples, applesauce, oil, eggs, vanilla, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  2. Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

For variations, try adding nuts, dried fruits, or different spices. Muffins can be stored for 3-4 days in the fridge or frozen for up to three months.
