Preparation
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, combine oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix together the applesauce, vegetable oil, and eggs until well combined.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the diced apples and raisins.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Let cool slightly before removing from tins and enjoy!
Notes
Serve warm with a pat of butter or drizzle with honey. Store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. For a quick reheating solution, warm them in the microwave for about 10-15 seconds.
