Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 pieces eggs Can be substituted with flax eggs for a vegan option.
Add-ins
  • 1 cup diced apples
  • 1/2 cup raisins Can be substituted with other dried fruits or chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, combine oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix together the applesauce, vegetable oil, and eggs until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in the diced apples and raisins.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 12-15 minutes or until a toothpick comes out clean.
  2. Let cool slightly before removing from tins and enjoy!

Notes

Serve warm with a pat of butter or drizzle with honey. Store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. For a quick reheating solution, warm them in the microwave for about 10-15 seconds.
