Ingredients
  

Main Ingredients
  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 cup Greek yogurt Ensure it's thick and creamy.
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup cilantro, chopped Can be substituted with green onions or parsley.
  • 1 each lime, juiced
  • to taste Salt and pepper
  • optional Chili powder For extra spice.

Method
 

Preparation
  1. In a large bowl, combine corn, red onion, bell pepper, and cilantro.
  2. In a separate bowl, mix Greek yogurt and lime juice until well combined.
  3. Pour the yogurt mixture over the corn and vegetable mixture.
  4. Stir well to coat all ingredients.
  5. Season with salt, pepper, and add chili powder if desired.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. For fresh and crunchy texture, mix ingredients just before serving.
