Preparation
  1. Peel and grate the sweet potatoes. Use a clean kitchen towel to squeeze out excess moisture.
  2. In a large bowl, combine the grated sweet potatoes, onion, garlic, olive oil, salt, and pepper.
Cooking
  1. Heat a non-stick skillet over medium heat. Add a little more olive oil if necessary.
  2. Form the sweet potato mixture into patties and place them in the skillet.
  3. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
Serving
  1. Serve warm, garnished with fresh herbs if desired.

Notes

You can keep the hash browns in the fridge for about 3-4 days or freeze them for up to a month. Reheat in a skillet until crispy. Tips: grate finely for quicker cooking and squeeze out moisture for crispiness.
