Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk the egg whites until frothy.
  3. Stir in diced vegetables, cheese, salt, pepper, and any optional spices.
  4. Pour the mixture evenly into the muffin tin cups.
Cooking
  1. Bake for 15-20 minutes, or until the egg bites are set and lightly golden.
  2. Allow to cool slightly before removing from the tin.

Notes

Serve with zesty salsa or a fresh avocado salad. Store in an airtight container in the fridge for 4-5 days or freeze for longer storage. A quick reheat in the microwave for 30-60 seconds brings them back to life.
