Ingredients
  

For the salmon
  • 4 fillets Salmon fillets Use skin-on for added flavor.
  • 1/4 cup Honey Preferably local or organic.
  • 2 tablespoons Sriracha sauce Adjust to taste for spice levels.
  • 2 tablespoons Soy sauce Use low sodium if preferred.
For the bowl
  • 2 cups Rice Cooked according to package instructions.
  • 2 cups Mixed vegetables e.g., bell peppers, broccoli, carrots.
  • 2 tablespoons Olive oil For sautéing the vegetables.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.
  • 1 tablespoon Sesame seeds Optional, for garnish.
  • 2 stalks Green onions Chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, sriracha sauce, and soy sauce.
  3. Place the salmon fillets on a baking sheet and brush the glaze over the top.
Cooking
  1. Bake the salmon for 12-15 minutes, or until cooked through.
  2. Meanwhile, cook the rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat and sauté mixed vegetables until tender.
Serving
  1. Serve the salmon over a bed of rice, topped with sautéed veggies, and garnished with sesame seeds and green onions if desired.

Notes

Leftovers can be stored in the fridge for up to 3 days. For longer storage, freeze for up to a month, separating the salmon and rice.
