Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together honey, sriracha sauce, and soy sauce.
- Place the salmon fillets on a baking sheet and brush the glaze over the top.
Cooking
- Bake the salmon for 12-15 minutes, or until cooked through.
- Meanwhile, cook the rice according to package instructions.
- In a skillet, heat olive oil over medium heat and sauté mixed vegetables until tender.
Serving
- Serve the salmon over a bed of rice, topped with sautéed veggies, and garnished with sesame seeds and green onions if desired.
Notes
Leftovers can be stored in the fridge for up to 3 days. For longer storage, freeze for up to a month, separating the salmon and rice.
