- In a bowl, combine the sweet corn, jalapeƱos, flour, cornmeal, baking powder, salt, and pepper.
- In another bowl, whisk together the milk and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
Cooking
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
- Remove and drain on paper towels. Serve warm.
Notes
Serve with a zesty dipping sauce like cilantro-lime crema or sour cream. Store in an airtight container for up to 3 days in the fridge, or freeze for up to a month.
