Ingredients
  

Dry Ingredients
  • 1 cup 1 cup sweet corn Fresh or frozen, thawed.
  • 2-3 pieces 2-3 jalapeƱos, finely chopped Adjust according to spice preference.
  • 1 cup 1 cup flour
  • 1/2 cup 1/2 cup cornmeal
  • 1/2 teaspoon 1/2 teaspoon baking powder
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1/2 teaspoon 1/2 teaspoon pepper
Wet Ingredients
  • 1/2 cup 1/2 cup milk Use non-dairy milk for a vegan option.
  • 1 piece 1 egg Or substitute with flaxseed meal for a vegan option.
  • Oil for frying Use vegetable or canola oil.

Method
 

Preparation
  1. In a bowl, combine the sweet corn, jalapeƱos, flour, cornmeal, baking powder, salt, and pepper.
  2. In another bowl, whisk together the milk and egg.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  3. Remove and drain on paper towels. Serve warm.

Notes

Serve with a zesty dipping sauce like cilantro-lime crema or sour cream. Store in an airtight container for up to 3 days in the fridge, or freeze for up to a month.
