  • 2 medium zucchini, sliced
  • 1 large onion, sliced
  • 2 tablespoons soy sauce can substitute with tamari for gluten-free
  • 1 tablespoon sesame oil can substitute with olive oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish

Method
 

Cooking
  1. Heat the vegetable oil and sesame oil in a large skillet over medium heat.
  2. Add the onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the garlic and ginger, and cook for another 30 seconds.
  4. Add the zucchini and continue to cook for about 5-7 minutes, until tender.
  5. Pour in the soy sauce and season with salt and pepper. Stir well to combine.
  6. Cook for an additional minute until heated through.
  7. Remove from heat, garnish with sesame seeds, and serve.

Notes

Keep a close eye on your zucchini so it stays slightly crunchy for that perfect bite. This stir-fry keeps well in the fridge for about 3-4 days.
