  • 8 pieces Mini sandwich rolls
  • 8 slices Sliced turkey or chicken
  • 8 slices Sliced cheese (cheddar, Swiss, or your choice)
  • 8 leaves Lettuce leaves
  • 1 medium Tomato, sliced
  • 4 tablespoons Mayonnaise or mustard
  • to taste Salt and pepper

Method
 

Preparation
  1. Slice mini sandwich rolls in half.
  2. Spread mayonnaise or mustard on each half.
  3. Layer sliced turkey or chicken on the bottom half.
  4. Add a slice of cheese, followed by lettuce and tomato.
  5. Season with salt and pepper if desired.
  6. Close the sandwiches and serve immediately or store in the refrigerator until serving.

Notes

These mini sandwiches last about 3-4 days in the fridge. They can also be frozen for up to a month. Reheat by thawing in the fridge overnight and serving cold or at room temperature. For variations, try deli ham or a veggie option, and use different spreads like pesto or hummus.
