  • 8 oz pasta (fusilli or penne) Cook according to package instructions.
  • 2 cups fresh corn (or canned/frozen corn) Thaw if using frozen.
  • 1 piece red bell pepper, diced Gives vibrant color and crunch.
  • 1 piece green onion, thinly sliced Adds a fresh onion flavor.
  • 1/4 cup cilantro, chopped Can be substituted with parsley or basil.
  • 1/2 cup cherry tomatoes, halved Fresh and sweet.
Creamy Dressing
  • 1/4 cup mayonnaise Base of the creamy dressing.
  • 1/4 cup sour cream Adds richness.
  • 1 tablespoon lime juice Fresh lime juice for zest.
  • to taste Salt and pepper Adjust for flavor.

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, red bell pepper, green onion, cilantro, and cherry tomatoes.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, allow the salad to chill for at least 30 minutes. It can be prepared a day in advance.
