Preparation
- Cook the pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the cooked pasta, corn, red bell pepper, green onion, cilantro, and cherry tomatoes.
- In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine. Chill in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, allow the salad to chill for at least 30 minutes. It can be prepared a day in advance.
