Main Ingredients
  • 3 pcs ripe bananas The riper, the better for sweetening.
  • 3 large eggs Room temperature is best for mixing.
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup melted butter Can substitute with coconut oil.
  • 1/4 cup erythritol Can substitute with other keto sweeteners.
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, melted butter, erythritol, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick comes out clean.
  2. Allow to cool before slicing.

Notes

Serve warm with butter, or add nuts or peanut butter for extra flavor. Store in an airtight container in the fridge for up to a week, or freeze slices for later use.
