  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened Use chilled butter to prevent spreading.
  • 2 large eggs Or use flax eggs for a vegan option.
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest Add more for extra zing.
  • 2 tablespoons lemon juice
Dry ingredients
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Add-ins
  • 1 cup fresh strawberries, chopped Fresh is best, thaw properly if using frozen.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
  3. Add the eggs, vanilla extract, lemon zest, and lemon juice. Mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, stirring until just combined.
  5. Fold in the chopped strawberries.
Baking
  1. Drop spoonfuls of cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with powdered sugar, pair with tea or coffee, or create cookie sandwiches with ice cream. Store in an airtight container for up to a week or freeze for up to 3 months.
