Ingredients
  

Lobster Filling
  • 1 3/4 lb whole lobster or substitute with 4 lobster tails or 1 lb lobster meat
  • 1 tbsp fresh squeezed lemon juice
  • 2 tbsp mayonnaise
  • 1 tbsp diced chives
  • 1/2 tbsp minced parsley
  • 2 tbsp diced celery
  • Salt
  • Fresh cracked black pepper
Buns and Butter
  • 2 pieces hot dog buns
  • 1 tbsp salted butter melted

Method
 

Preparation
  1. Bring a large pot of salted water to a rolling boil.
  2. Add the lobster and cook for about 8–10 minutes until bright red.
  3. Remove and cool in an ice bath.
  4. Once cooled, extract the meat from the lobster, discarding the shells. Chop the lobster into bite-sized pieces.
  5. In a bowl, combine the lobster meat, lemon juice, mayonnaise, chives, parsley, and celery. Season with salt and pepper to taste.
Assembly
  1. In a skillet, toast the hot dog buns in melted butter until golden.
  2. Spoon the lobster mixture generously into each bun.

Notes

For a healthier twist, swap the mayonnaise with Greek yogurt. Adding a hint of spice with Old Bay seasoning or red pepper flakes will enhance the flavor.
