  • 1.5 tbsp fresh lemon juice
  • ¼ cup finely chopped celery (inner stalks only)
  • 1 tbsp thinly sliced chives, plus more for garnish
  • Salt and freshly cracked black pepper, to taste

Method
 

Preparation
  1. In a chilled mixing bowl, combine the lobster, mayonnaise, lemon juice, celery, and chives.
  2. Gently fold everything together until just combined.
  3. Season lightly with salt and pepper.
  4. Cover and chill in the fridge for 30–60 minutes.
  5. Serve cold in lettuce cups, toasted buns, or plated over avocado.

Notes

Don't rush the chilling part; it's essential for a refreshing taste. Store the salad in an airtight container for 2–3 days in the fridge. Avoid freezing.
