- In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, celery, and chives. Mix well.
- Season with salt and pepper to taste.
Toasting Buns
- Butter the outside of the rolls and toast them in a skillet until golden brown.
Assembly
- Fill each toasted roll with the lobster mixture.
- Serve cold and enjoy your homemade Maine lobster rolls!
Notes
Store the lobster mixture separately from the rolls to avoid sogginess. Leftovers can be kept in the fridge for about 1-2 days. The lobster filling can be frozen for up to 3 months.
