Ingredients

Dry Ingredients
  • 2.5 cups certified gluten-free old-fashioned oats (divided)
  • 1 teaspoon cinnamon
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Wet Ingredients
  • 1 cup milk (any kind)
  • 0.5 cup mashed banana (~1 large banana)
  • 0.25 cup pure maple syrup (not pancake syrup!)
  • 0.25 cup coconut oil (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 0.33 cup pecan halves (chopped, optional) Add for nutty flavor and crunch

Method

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C). Spray an 8×8 baking pan with nonstick spray and set aside.
  2. In a food processor or high-powered blender, add 1 cup of old-fashioned oats and process until they resemble flour. Set aside.
Mixing Ingredients
  1. In a large bowl, combine milk, mashed banana, maple syrup, coconut oil, egg, and vanilla. Whisk until well mixed.
  2. Add the remaining 1.5 cups of oats, oat flour, cinnamon, baking powder, and salt. Stir until combined. If using pecans, fold them in.
Baking
  1. Pour the batter into the prepared baking pan and bake for 35-40 minutes, or until the edges turn golden brown and the center is set.
  2. Check around the 25-minute mark. If the edges seem to be browning too fast, cover with a piece of foil.
Cooling & Serving
  1. Let the bars cool before slicing into squares. Store in the fridge or wrap them individually and freeze for later.
  2. For serving, drizzle with more maple syrup or pair with Greek yogurt.

Notes

These bars keep well in the fridge for about a week or in the freezer for up to three months. They can be reheated in the microwave for a few seconds for a fresh taste.
