Method
Baking
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
- Stir in boiling water until well combined (the batter will be thin).
- Pour batter into prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow cakes to cool for 10 minutes in the pans, then remove from pans to cool completely.
Ganache Preparation
- Heat the heavy cream until just boiling, then pour over chocolate chips. Let sit for a few minutes and stir until smooth.
Assembling the Cake
- Once the cakes are cool, spread ganache between the layers and over the top of the cake.
- Slice and enjoy your rich chocolate cake!
Notes
For serving, consider adding a scoop of vanilla ice cream, fresh berries, or an additional drizzle of ganache. Store leftovers in the fridge for up to 5 days or freeze slices for up to 3 months.
