Vegetable Filling
  • 2 cups 2 cups fresh spinach, chopped
  • 1/2 cup 1/2 cup onion, chopped
Cheese Filling
  • 1 cup 1 cup feta cheese, crumbled
  • 1 cup 1 cup shredded cheese (like mozzarella or cheddar)
Egg Mixture
  • 4 large 4 large eggs
  • 1 cup 1 cup milk
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1/4 teaspoon 1/4 teaspoon black pepper
  • 1/4 teaspoon 1/4 teaspoon nutmeg
  • 1/2 teaspoon 1/2 teaspoon dried oregano

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onion until translucent.
  3. Add the chopped spinach and cook until wilted.
  4. In a mixing bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and oregano.
  5. Place the pie crust in a pie dish and layer with spinach, feta cheese, and shredded cheese.
  6. Pour the egg mixture over the filling.
Baking
  1. Bake for 35-40 minutes or until the quiche is set and golden on top.
  2. Allow to cool slightly before slicing and serving.

Notes

For a flakier crust, consider chilling the pie crust before filling. You can swap out the feta cheese with goat cheese for a tangy twist. Add diced tomatoes or bell peppers for extra color and crunch.
