Ingredients

Coleslaw Base
  • 1 14 oz. package coleslaw mix
  • 1/2 piece red bell pepper, diced
  • 1/2 piece orange bell pepper, diced
  • 1 13.75 oz. can black beans, properly rinsed and drained
  • 1 13.75 oz. can corn, adequately rinsed and drained
  • 1/3 cup freshly minced cilantro
  • 1 piece jalapeño, minced
Dressing
  • 3/4 cup mayonnaise of superior quality
  • 1/3 cup premium sour cream
  • 1/4 cup freshly squeezed lime juice
  • 1 package taco seasoning

Method

Preparation
  1. In a medium-sized bowl, combine mayonnaise, sour cream, freshly squeezed lime juice, and taco seasoning. Whisk until smooth and let the mixture chill in the refrigerator.
  2. In a separate, larger bowl, toss together the coleslaw mix, diced red and orange bell peppers, black beans, corn, minced cilantro, and jalapeño. Make sure to drain excess liquid from the beans and corn to keep your coleslaw from getting soggy.
  3. Retrieve the dressing from the fridge and pour it over the veggie mixture. Stir everything together until the vegetables are evenly coated.
  4. For an extra pop of green, sprinkle additional cilantro on top before serving.
Serving
  1. Serve this colorful coleslaw alongside grilled meats, on tacos, or as a topping for nachos.

Notes

Coleslaw stores well in the refrigerator for up to 3 days in an airtight container. For the best texture, store the dressing and veggies separately until serving.
