  • 4 ears ears of corn, husked
  • 1/2 cup mayonnaise
  • 1 unit lime, juiced
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • to taste Fresh cilantro, chopped
  • to taste Salt

Method
 

Cooking
  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally until it’s slightly charred.
  3. In a bowl, mix mayonnaise, lime juice, and a pinch of salt.
  4. Once the corn is done, slather that delicious mayo-lime sauce all over the corn.
  5. Sprinkle with chili powder, cotija cheese, and chopped cilantro.
  6. Serve immediately and enjoy that corn magic!

Notes

Make it a meal by serving alongside grilled chicken or fish. Store leftovers in an airtight container for up to 3 days. Reheat on the grill or microwave.
