Preparation
- Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and removing from heat for 12 minutes.
- Transfer the eggs to an ice bath to cool.
- Once cooled, peel the eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Spoon or pipe the mixture back into the egg whites.
- Sprinkle with paprika and garnish with chopped herbs if desired.
- Serve chilled.
Notes
Mimosa Eggs can be prepared a day in advance for convenience. Store in an airtight container in the fridge for up to 2-3 days. For variations, consider adding chopped capers, bacon crumbles, or even caviar for an elegant touch.
