Ingredients
  

For the egg filling
  • 6 large large eggs For hard boiling
  • 3 tablespoons mayonnaise For creaminess
  • 1 teaspoon Dijon mustard For a zesty flavor

Method
 

Preparation
  1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and removing from heat for 12 minutes.
  2. Transfer the eggs to an ice bath to cool.
  3. Once cooled, peel the eggs and cut them in half lengthwise.
  4. Remove the yolks and place them in a bowl.
  5. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Sprinkle with paprika and garnish with chopped herbs if desired.
  8. Serve chilled.

Notes

Mimosa Eggs can be prepared a day in advance for convenience. Store in an airtight container in the fridge for up to 2-3 days. For variations, consider adding chopped capers, bacon crumbles, or even caviar for an elegant touch.
