  • 1 cup milk Any type of milk can be used.
  • 4 large eggs Can substitute with egg whites for lower cholesterol.
  • 1 cup shredded cheese Use your favorite type, like cheddar or mozzarella.
  • 1 cup diced vegetables Use bell peppers, spinach, onions, or any preferred veggies.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pre-made pie crust store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the milk, eggs, salt, and pepper until well combined.
  3. Stir in the cheese and veggies of your choice.
  4. Roll out your pie crust and cut it into small circles to fit in your muffin tin. Press the circles into the muffin cups.
  5. Pour the egg mixture into each cup until nearly full.
  6. Bake for 20-25 minutes, or until the tops are golden and puffed.
  7. Let cool slightly before removing from the pan. Enjoy!

Notes

Serve warm, paired with a fresh green salad, zesty salsa, or crispy bacon bits. Great for leftovers, can be stored in fridge for up to 3 days or frozen for about a month. Reheat in the oven or microwave.
