Preparation
- Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- In a mixing bowl, mix the melted butter with the mashed bananas.
- Stir in the sugar, beaten egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour last, and mix until just incorporated.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 60-65 minutes, until a toothpick inserted comes out clean.
- Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter or whipped cream cheese. The banana bread keeps well for 3-4 days at room temperature and can be frozen for up to 3 months. Use overripe bananas for best results and avoid over-mixing.
