  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can substitute with whole wheat or gluten-free flour.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mix the melted butter with the mashed bananas.
  3. Stir in the sugar, beaten egg, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture and mix in.
  5. Add the flour last, and mix until just incorporated.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-65 minutes, until a toothpick inserted comes out clean.
  2. Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or whipped cream cheese. The banana bread keeps well for 3-4 days at room temperature and can be frozen for up to 3 months. Use overripe bananas for best results and avoid over-mixing.
