  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder Use high-quality cocoa for better flavor.
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 2 large eggs Or substitute with 1/4 cup unsweetened applesauce.
  • 1 cup brewed coffee Use freshly brewed coffee for extra flavor.
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, coffee, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before serving.

Notes

Serve warm topped with whipped cream or vanilla ice cream. Cake stays fresh for 3-5 days in the fridge.
