  • 2 tbsp olive oil
  • 2 strips lime zest, sliced
  • 2 tbsp lime juice
  • 1 tsp sugar
  • Kosher salt and freshly ground black pepper to taste
Main Ingredients
  • 1/2 small watermelon, rind discarded and sliced Use ripe watermelon for maximum sweetness.
  • 1/3 cup torn fresh mint
  • Flaky sea salt for garnish

Preparation
  1. Whisk together the olive oil, lime juice, and sugar in a bowl.
  2. Season with kosher salt and black pepper to taste.
  3. Serve the watermelon topped with the dressing, lime zest, torn mint, and a sprinkle of flaky sea salt.

Notes

If you have leftovers, store them in an airtight container in the fridge and enjoy within 2-3 days. You can prep the ingredients ahead of time and combine just before serving for the freshest taste.
