Preparation
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pierce them several times with a fork. Bake in the preheated oven for about 45-60 minutes, or until tender.
Cooking the Filling
- While the potatoes are baking, heat olive oil in a skillet over medium heat.
- Add garlic and sauté for about 1 minute.
- Add the sliced mushrooms and cook until they are browned and tender, about 5-7 minutes.
- Stir in the spinach and cook until wilted. Season with salt and pepper.
Assembling the Potatoes
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut the potatoes in half lengthwise and scoop out some of the insides, leaving a small edge.
- Mix the scooped potato with the mushroom and spinach mixture, then stir in the shredded cheese.
- Stuff the potato skins with the filling and return them to the oven.
- Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Serving
- Serve hot, garnished with sour cream and chopped chives or parsley if desired.
Notes
Leftover stuffed potatoes stay fresh in the fridge for about 3-5 days. Reheat in the oven at 350°F (175°C) until heated through. Add a splash of moisture with a little extra cheese if desired.
