  • 3 medium ripe bananas Use overripe bananas for the sweetest flavor.
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk Add an extra tablespoon for a moister loaf.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts You can substitute with pecans or chocolate chips.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the melted butter and mix until combined.
  4. Stir in sugar, eggs, and vanilla extract until everything is well-blended.
  5. In another bowl, combine flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the chopped walnuts.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  3. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Slice while it’s still warm, and enjoy with cream cheese, honey, or plain. Store in an airtight container at room temperature for about 3 days or in the fridge for up to a week. For longer storage, freeze for a rainy day.
