  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow) Chopped into bite-sized pieces
  • 1 cup Baby Carrots Chopped if large
  • 1 pound Baby Potatoes Halved or quartered
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions For garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Chop the kielbasa and veggies into bite-sized pieces.
  3. In a bowl, whisk together honey, garlic, and soy sauce.
  4. Toss the kielbasa, veggies, and olive oil on a large baking sheet.
  5. Pour the honey-garlic mix over everything and toss until well-coated.
  6. Bake for 25-30 minutes, stirring halfway through, until everything is tender and caramelized.
  7. Garnish with fresh parsley or green onions before serving.

Notes

When storing leftovers, keep them in an airtight container in the fridge for up to 3-4 days. They can be frozen for 2-3 months. Reheat in the oven or microwave before serving.
