Ingredients
  

For the brownie and cookie layers
  • 1 cup unsalted butter, softened Make sure it's at room temperature
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Enhances flavor
  • 1 cup chocolate chips Feel free to mix varieties
  • 1 cup crushed Oreo cookies For added texture

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
Mixing the Batter
  1. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  2. Gradually blend the dry ingredients into the wet mixture.
  3. Fold in the chocolate chips and crushed Oreos.
Baking
  1. Pour half of the brownie batter into the prepared baking pan and spread evenly.
  2. Layer with cookie dough over the brownie layer.
  3. Pour the remaining brownie batter on top and spread evenly.
  4. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Let cool before cutting into squares and serving.

Notes

Consider serving with vanilla ice cream and drizzling with chocolate sauce for an indulgent treat. Store leftovers in an airtight container for up to a week or freeze for up to three months.
