  • 1 pound fresh salmon, diced
  • 1 cup sushi rice Cook according to package instructions
  • 1 ripe avocado, diced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Nori sheets cut into bite-sized pieces
  • Soy sauce for dipping (optional)
  • Sesame seeds for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice according to package instructions, then let it cool.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then stir into the cooled rice.
  4. Add the diced salmon and avocado to the seasoned rice and mix gently.
Baking
  1. On a baking sheet lined with parchment paper, spoon the rice mixture onto nori pieces, shaping them into bites.
  2. Bake for 15-20 minutes or until the salmon is cooked through and the bites are slightly crispy.
Serving
  1. Serve warm with soy sauce for dipping and garnish with sesame seeds if desired.

Notes

These bites taste best freshly baked, but you can store them for about 3 days in the fridge. Reheat them in the oven to restore their crispiness. You can prepare the filling and nori sheets ahead of time for convenience.
