Ingredients
  

For the Cod
  • 4 pieces cod fillets
  • 2 tablespoons olive oil For cooking
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes Optional for added spice
For the Sauce
  • 1 cup diced tomatoes Fresh or canned
  • 1/4 cup fresh basil, chopped Use fresh for better flavor
  • 2 cloves garlic, minced
For Serving
  • as needed Pasta or crusty bread For serving

Method
 

Cooking the Cod
  1. Heat olive oil in a pan over medium heat.
  2. Season the cod fillets with salt and pepper.
  3. Once the oil is hot, add the cod and sear for about 3-4 minutes on each side until golden brown and cooked through.
Making the Sauce
  1. In the same pan, add minced garlic and cook until fragrant.
  2. Add diced tomatoes, basil, and optional red pepper flakes, stirring to combine.
  3. Simmer the sauce for 5-7 minutes until slightly thickened.
Serving
  1. Serve the cod topped with the tomato basil sauce over pasta or with crusty bread.
  2. Garnish with a sprinkle of extra basil for added color and freshness.

Notes

Make sure your oil is hot enough for a good sear. Use fresh ingredients for the best flavor.
