Ingredients
  

For the Peach Filling
  • 2 cups fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar for mixing with peaches
  • 1 teaspoon vanilla extract
For the Crust and Topping
  • 1 cup granulated sugar remaining sugar for crust
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a bowl, combine sliced peaches with 1/4 cup of sugar and vanilla extract. Set aside.
  3. In another bowl, mix flour, remaining sugar, baking powder, salt, and cinnamon.
  4. Cut in the butter until the mixture resembles coarse crumbs.
  5. Stir in the oats.
Baking
  1. Press half of the mixture into the bottom of the prepared baking dish.
  2. Spread the peach mixture over the crust.
  3. Crumble the remaining mixture over the peaches.
  4. Bake for 30-35 minutes until golden brown.
  5. Let it cool before cutting into bars.
  6. Serve with vanilla ice cream if desired.

Notes

Don’t rush the cooling time—let them chill before slicing for cleaner, prettier bars. Serve warm with honey or vanilla ice cream for added sweetness. Store leftovers in the fridge for about 5 days or freeze for up to 3 months.
