Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, eggs, sour cream, lemon juice, lemon zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix!
- Divide the batter evenly among the muffin cups.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack. Enjoy your muffins warm or at room temperature.
Notes
Use room temperature ingredients for a smoother batter. Avoid overmixing to keep the muffins tender. Try using Greek yogurt in place of sour cream for a protein boost. These muffins are great served with butter or lemon curd.
