Preparation
- Preheat the oven to 425°F (220°C).
- In a bowl, mix together the olive oil, garlic, cumin, paprika, smoked paprika, oregano, lime juice, and a pinch of salt and pepper.
- Rub the mixture all over the chicken, making sure to get under the skin for an extra flavor punch.
Cooking
- Place the chicken in a roasting pan and roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Once done, remove from the oven and let it sit for 10 minutes.
- Garnish with fresh cilantro before serving.
Notes
Let the chicken marinate overnight for deeper flavor. Use fresh spices for best results. Store leftovers in an airtight container for 3-4 days in the fridge or up to 3 months in the freezer.
