  • 1 whole whole chicken (about 3-4 lbs)
  • 3 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 lime lime, juiced
  • Fresh cilantro, for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix together the olive oil, garlic, cumin, paprika, smoked paprika, oregano, lime juice, and a pinch of salt and pepper.
  3. Rub the mixture all over the chicken, making sure to get under the skin for an extra flavor punch.
Cooking
  1. Place the chicken in a roasting pan and roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  2. Once done, remove from the oven and let it sit for 10 minutes.
  3. Garnish with fresh cilantro before serving.

Notes

Let the chicken marinate overnight for deeper flavor. Use fresh spices for best results. Store leftovers in an airtight container for 3-4 days in the fridge or up to 3 months in the freezer.
